Affordable Carrot Cake Muffins

A family favourite! These carrot cake muffins are so delicious and so easy to make! Plus, they are so budget friendly. We make these anytime carrots are on sale (or need to be used up). The kids love them in their school lunches, they also pair well with your morning coffee.

We modified our recipe from Creme de la Crumb’s absolutely delicious Carrot Cake Muffin Recipe, our version is below

INSTRUCTIONS

  • Preheat oven to 350 degrees

  • In a medium bowl whisk together flour, sugar, cinnamon, baking soda, baking powder, and salt.

  • In a large bowl combine oil, brown sugar, eggs, and vanilla and mix well. Stir in grated carrots.

  • Stir dry ingredients into wet ingredients until completely incorporated. Note: this will be thick!

  • Spray a muffin tin with cooking spray, then line with paper cupcake liners. Evenly divide mix among all 12 muffin lines, approx. 2/3 full.

  • Bake in preheated oven for 20-25 minutes until a toothpick inserted in the center of the muffins comes out clean. Cool for 5 minutes before transferring to a cooling rack to continue cooling.

  • Serve fresh or store in airtight container at room temperature up to 3 days, or in the fridge up to 2 weeks.
